The Recipe Corner: Red Velvet Cookies

Red VelvetI love baking cookies – they’re super quick and simple (even kids can have a go at them). I paired my favourite flavor (red velvet) with my favourite thing to bake (cookies) and came up with this recipe. These red velvet cookies are gooey on the inside and crisp on the outside, everything you need with a hot chocolate on a cold day. You can bake a batch leading up to Christmas for all the holiday feels.

This recipe makes 20-24 cookies and stores up to 2 days in an airtight container.

What You Need
1 ¼ cups All-purpose Flour (maida)

¼ Cocoa Powder (preferably unsweetened)
1 teaspoon Baking soda
Pinch of salt

100g softened butter
1 Egg
Vanilla Essence
¾ Brown sugar
2 tablespoon Milk
3-4 drops red food coloring
White or dark Chocolate chips (optional)

Tried and tested tip – Make sure all of your ingredients at room temperature before you start. This will help them to mix easily.

 Putting it all Together

  1. Sift and mix the dry ingredients (flour, cocoa powder, baking soda, salt)
  2. Whisk the egg with the vanilla essence in a separate bowl. Mix in the sugar and milk until well combined.
  3. In a large bowl beat the butter till it is smooth and creamy (An electronic Kitchen Aid with a paddle attachment will give you the best results).
Tried and tested tip – you can use salted butter but make sure not to add the salt in with the dry ingredients. If you use unsalted butter then add the salt as the recipe prescribes
  1. Add the egg mixture till well combined. Add the red food coloring till you achieve the color you desire.
Tried and tested tip – I would highly recommend using gel food coloring as liquid will change the texture of the mixture
  1. Gradually add the dry ingredients mixing well between each addition. You will be left with a moist mixture. Cover the bowl with cling wrap. Refrigerate the mixture for at least 45 minutes.
  1. Pre-heat the oven to 180 degrees.
  2. Take approximately 1 tablespoon of the mixture and roll into a ball. Place on baking tray lined with a baking sheet. Repeat for the rest of the mixture.
  3. Bake for 10-12 minutes
  4. While the cookies are still warm, stick the chocolate chips onto them and let it melt into the cookie
  5. When the cookies have cooled slightly, transfer to a wire rack to allow them to cool evenly

You can try variations of this recipe by stuffing the cookie with Nutella or making cookie sandwiches. Keep a look out on this blog for similar super easy and fun recipes!
